250g grated carrots
150g melted butter or oil
2 large free-range eggs
200g soft brown or caster sugar
200g SR flour
½ tsp salt
2 tsp cinnamon
2 tsp baking powder
2 tbsp milk
Oven at 180 c.
Melted butter, carrots and sugar in a bowl – mix well.
Break eggs into a separate bowl – beat then add to the mixture.
Sieve dry ingredients into the mix and beat until smooth
Stir in the milk
Spoon into cake or muffin cases
Bake for approx. 20 mins – firm to touch.
