Gingerbread biscuits/people

Ingredients

  • 350 g plain flour

  • 2 tsp ground ginger

  • ½ tsp ground cinnamon

  • 1 tsp bicarbonate of soda

  • 100 g butter/marg

  • 175 g soft brown sugar

  • 1 egg

  • 3 tbspn golden syrup

Method

  1. Pre-heat oven to 180°C

  2. Mix together flour, spices & bicarbonate of soda

  3. Rub in butter until it looks like breadcrumbs

  4. Add sugar

  5. In separate bowl mix egg & syrup – then add to dry ingredients

  6. Mix until forms a dough

  7. Tip onto floured surface & knead for a minute until smooth

  8. Flatten with hands (don not use rolling pins too sticky), cut using gingerbread man cutters

  9. Lay on lined baking trays

  10. Decorate with currents and glace cherries (optional)

  11. Cook for 10-15 mins until golden brown, remove from oven and allow to cool.
